Soak the chickpeas with 1/4 teaspoon baking soda overnight
Rinse the chickpeas. Then bring to hard boil with 1/4 teaspoon baking soda. Boil for 10 minutes. Reduce heat to a simmer and cook until the chickpeas feel waxy between your fingers.
Strain chickpeas and add to blender (or food processor) with other ingredients
Blend at high speed for 5 minutes. This should be done while hot. Add water as necessary to get to the right texture. Hummus should be a little "runny" while hot. It will firm up a bit when it cools.
