Silky Hummus

Ingredients

  • 1 Cup Chickpeas raw (200g)
  • 1/3 Cup olive oil
  • 2/3 Cup lemon juice
  • 1 Cup Tahini
  • 1 teaspoon salt
  • 1/2 teaspoon Baking Soda

Instructions

  • Soak the chickpeas with 1/4 teaspoon baking soda overnight
  • Rinse the chickpeas. Then bring to hard boil with 1/4 teaspoon baking soda. Boil for 10 minutes. Reduce heat to a simmer and cook until the chickpeas feel waxy between your fingers.
  • Strain chickpeas and add to blender (or food processor) with other ingredients
  • Blend at high speed for 5 minutes. This should be done while hot. Add water as necessary to get to the right texture. Hummus should be a little "runny" while hot. It will firm up a bit when it cools.
  • Cool hummus. Enjoy!
