Ingredients
- 1/3 cup butter melted in pan you will use to cook cake
- 2/3 cup brown sugar to sprinkle on melted butter
- Pineapple circles 1 can
- 3 eggs separated
- 1 cup granulated sugar
- 1 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup pineapple juice from the can
- 1 teaspoon vanilla extract
Instructions
- Set oven to 375°F
- Use a rectangular, square (9×9) or round pan. Melt butter in pan in the oven. Sprinkle brown sugar on the melted butter.
- In a mixer mix the egg yolks with sugar until light colored and fluffy. Transfer to another bowl and clean the mixer bowl.
- Beat egg whites in mixer until still peaks.
- Combine the dry ingredients (sifted), the egg yolk mixture, and the egg whites by gently folding.
- Place the pineapples on the pan. Add cherries (or in our case cranberries) to the middle of the rings. Carefully cover with batter. Bake in oven 25-35 minutes.
- After removing from oven allow to cool for 3-5 minutes. While still warm invert onto a serving tray. Delicious warm, or the next day.
