Silky Hummus
The most decadent, butter-y, silky hummus you'll ever have. You can't buy hummus like this in the grocery store

Ingredients
- 1 Cup Chickpeas raw (200g)
- 1/3 Cup olive oil
- 2/3 Cup lemon juice
- 1 Cup Tahini
- 1 teaspoon salt
- 1/2 teaspoon Baking Soda
Instructions
- Soak the chickpeas with 1/4 teaspoon baking soda overnight
- Rinse the chickpeas. Then bring to hard boil with 1/4 teaspoon baking soda. Boil for 10 minutes. Reduce heat to a simmer and cook until the chickpeas feel waxy between your fingers.
- Strain chickpeas and add to blender (or food processor) with other ingredients
- Blend at high speed for 5 minutes. This should be done while hot. Add water as necessary to get to the right texture. Hummus should be a little “runny” while hot. It will firm up a bit when it cools.
- Cool hummus. Enjoy!
