Cheesy Grits
Not actually grits. These are Sampe. And predecessor to southern grits.

Ingredients
- 1 Cup Sampe on old New England grits, ok to use grits instead
- 4 cups filtered water + up to 1 cup for cooking
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup grated cheddar
Instructions
- Combine grits and water in a pot. Bring to a hard boil for 10 minutes. Stir periodically to prevent sticking.
- Bring temperature down and allow to simmer. When tender (45-60 minutes) season and mix in cheese.
