Not actually grits. These are Sampe. And predecessor to southern grits.

Ingredients

  • 1 Cup Sampe on old New England grits, ok to use grits instead
  • 4 cups filtered water + up to 1 cup for cooking
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup grated cheddar

Instructions

  • Combine grits and water in a pot. Bring to a hard boil for 10 minutes. Stir periodically to prevent sticking.
  • Bring temperature down and allow to simmer. When tender (45-60 minutes) season and mix in cheese.
